Needs some editing By Reader2 This cookbook contains an integrated Table of Contents that's broken down into three sections; "Bread and Breakfast," "Pasta, Pie and Salads," and "Savory and Soups" with individual recipes listed under each heading. There are 31 recipes total and no pictures. Most of the recipes only have a few steps in the directions, making them quick and easy to prepare.I would give this book a better rating but the formatting of the book is a bit irritating. There are large, empty, gaps that exist between some of the recipes, no matter what size font I tried. The recipe titles are in a super, large-sized font and frequently appear at the bottom of the previous page...the title often being the only thing on the page. Sometimes the recipe title is split between two pages, half the title on the bottom of one page, the other half on the top of the next page. (I use font size 1 on my Kindle Fire so the entire title should fit easily on one page, especially if that page is basically empty.)I haven't read every single recipe from beginning to end, but I did notice there were some issues with two of the recipes that I did read. Recipe 13. "Tuna Salad Nicoise," has headings for "ingredients" and "directions" but nothing is written under either one. There's no recipe at all, just a title and the sub-headings. Recipe 16. "Pesto Tuna Salad with Sun Dried Tomatoes" has steps numbered 1, 2, 3 and 6 under the directions. (It's missing steps 4 and 5) I'm assuming that's just a numbering error because the directions appear to be complete. (At least the directions make sense as written.)This cookbook is certainly usable as is but little editing and better formatting would make a huge difference.

By Judith Stephens #1 “Tuna Quesadillas” is really “Tangy Tuna Black Bean Quesadillas” off allrecipesDOTcom submitted by SUPERTIM99 around May30,2009, and was never cooked by this fake author or anyone at Encore Publishing either. The directions on the web site tell you to drain the water, this recipe never does. Bad directions.The proof of that fact is in Encore’s directions: “3.Spread half of the mixture on the tortilla. Sprinkle half of the cheese on top of the mixture. Cover the skillet and allow to cook for 1 minute. Flip the quesadilla and cover for one to two minutes longer.” At that point, what you have on top of the single tortilla is cheese so when you flip it, you will have melted cheese on your skillet. That’s NOT the way you make quesadillas.The part they left out of the directions from the above web site where they got the recipe is as follows: ” Sprinkle with half the Mexican cheese; cover with another tortilla. Place a lid on the skillet and cook for 1 minute.” And that, my friends, is how you make a quesadilla. That’s a pretty important quesadilla direction – placing a 2nd tortilla on top of the first tortilla and its content inside the skillet.This also makes their servings wrong. They don’t end up with 4 servings but really 8 servings simply because they tried to hide the fact they got this recipe off a copyright-protected Internet site. All the ingredient quantities are exactly the same but they change the instructions to try and hide the theft of the IP not realizing that would change the servings. Just not cooks, only cut-and-pasters.They try to make the books seem larger and more important by adding unnecessary blank spaces between the recipes they’ve copied off the Internet. Therefore, the title to recipe #2 is at the bottom of the page of directions for recipe #1 and the ingredients start on the next page. Bad formatting as another review has also pointed out. You’d think they would have benefited from his comments but not so.The recipe is “Mediterranean Style Tuna Wrap” which is really a recipe called “MediterraneanTuna Wrap” developed and copyright-protected, all rights reserved by Ellie Krieger in 2007. Posted on the foodnetworkDOTcom and “Eating Healthy” magazine in 2009. All the ingredients are in the exact same quantities and same order in this fake book as they are on the Internet site and copyrighted by Ellie Krieger.One of the funnier ones is the #6 “Speedy Bagel Tuna Melt” which is really “”Speedy Bagel Tuna Melt” posted on allrecipesDOTcom by lkk around November 10, 2007, and the fake author left out the tuna! Very talented cook that listed ALL the same ingredients in the exact same amounts for a tuna recipe and left out the tuna! IT is to laugh. But Encore did say to mix the mysterious quantity of tuna in the instructions where it is mentioned.#7 “Chili Tuna Wraps” is really “Spicy Tuna Wraps” from the March/April 2011 issue of EatingWell magazine. But again, the incompetence of this fake author and publisher is evident because they left out the hot sauce in the ingredient list but tell you to add the mystery quantity to the “medium bowl” in direction #1. It would be better if you went to the website where this recipe really lives and get the better and correct version plus the nutrition information and not screw around with this bunch of incompetents.#8 “Huevos Endiablados” is really ”Huevos Endiablados” developed by Allrecipes for their website allrecipesDOTcom around February 25, 2013. Another funny thing – apparently the recipe copier thinks all salt must go with pepper so “1/4 tsp pepper” was added to the ingredients list that didn’t appear on the original ingredient list on the Allrecipes original version.But it isn’t added to a lot of recipes where black pepper bits will look unattractive such as in deviled eggs such as this recipe. If the taste of pepper is desired, white pepper may be required in place of black so there’s no little black specks to ruin the appearance of the final product. And, this brilliant recipe copier forgot to list the adding of the pepper to the instructions. Just a copy-and-paster fake book maker, not a cook or recipe maker.And on and on and on ad nausea as always with this fake publisher.

Recipe #13, Tuna Salad Niciose had absolutely no info. No ingredients, no instructions. Hum. Recipe #15 Tuna with Pesto, had no pesto.On the other hand, it didn't have the recipe from the box of macaroni and cheese I use.Ms. Swanson, please be more careful in your books.
