2 of 3 people found the following review helpful. Lacking By squid amigo 1. This book is riddled with numerous and careless typos, like "peat" instead of "meat".2. The page numbers on each page are missing. The table of contents will tell you the page number on which a chapter begins, but if you then search for that number you will discover that the pages of the book are not numbered. oops!3. Teaching is lacking. The subject of fermented foods is unfamiliar to many people and requires more explanation. For instance, there could have been a section on using whey as a starter for all of the foods in this book -- not just for the meat and dairy. Also, using the term "starter package" does not help the reader understand what a "starter package" is. What is it made of? Who makes it? Which stores have it?What if the reader would like to reduce sodium in the diet? Will decreasing salt affect the fermentation if not using a "starter package"?If the reader is lactose intolerant will this rule out all whey fermentation?4. Lack of credibility. The book gives no information about the author. What makes this author an expert? One can wonder -- with the carelessness demonstrated in the book are the recipes safe?

However - I was intrigued enough to try it and found that the recipes were really good and delicious. I now make fermented foods all the time. This is a really interesting and unusual book to have in your cooking library. Jake

Especially the classic sauerkraut was my favourite! For those of you yet to give fermented recipes a shot, this is something you can experiment with for a different kind of culinary experience!
