#26 Bacon Salad
No salad is complete without bacon added to it! This salad is really flexible on what you add to it and how much. The secret is in the dressing you are going to add.
Ingredients:
2 cups chicken, cooked and diced 1/2 cup red bell pepper, diced 1/2 carrot, grated1/8 cup dried unsweetened cranberry 1/2 apple, peeled, cored and shredded 1 green onions, chopped 1 cups red cabbage, finely shredded 1 cups green cabbage finely shredded2 slices bacon, cooked and crumbled
Dressing:
1/8 tsp. black pepper¼ tsp. of unrefined sea saltJuice from 1 lemon1 tsp. of mustard, preferably brown3 tbsp. of organic bacon fat2 tbsp. basil
Directions:
1. Add all the salad ingredients to a large bowl and toss to combine.2. To make dressing add mustard, lemon juice, sea salt, pepper to a mixing bowl and blend them together. 3. After they are mixed well, pour the bacon fat into the bowl and mix it to create a vinaigrette. 4. Once complete, you can sprinkle the basil on the top of the dressing. 5. Drizzle dressing over your salad and serve.

About the Author Who is Charity Wilson? Charity Wilson is the loving mother of four children, well five if you count her husband of over 25 years. She has worked in various jobs over the years but realized one day home is where she needed to be. After a lot of deliberation and research, she decided to become a full-time writer. Being a full time at home mom and writer sounds like a lot of work and for good reason, it is. She loves every minute of the organized chaos that is her daily life. It adds flavor to dishes and you can eat on its own. It's a great ingredient and bacon recipes made the paleo way, it's even better for you. I got this book , yes because I love bacon but also the cover looks so delicious. There are 50 recipes including starters and appetizers, breakfast, lunch, dinner and even dessert. All using bacon as its star ingredient. I can't wait to try a few of the recipes from this cookbook like the bacon pepper poppers, the bacon avocado burger, the bacon butternut squash soufflé, the caramel bacon delight and bacon shrimp stir-fry. The recipes are well presented and the instruction are clear and concise making it easy to prepare each recipe. Highly recommended to anyone who loves bacon or is following a paleo diet.

I’m a huge fan of bacon, so of course I jumped on Charity Wilson’s Paleo Bacon cookbook as soon as I saw it. It’s got pretty much everything you want: breakfast recipes, lunch recipes, snacks, dinner recipes… everything. All with bacon. The recipes are well structured and straightforward and will help you to diversify your Paleo diet.My favorites so far: Broccoli Bacon Salad, Garlic Chicken Wrapped in Bacon, Bacon Butternut Squash Souffle and the Peachy Bacon Snacks. Definitely a big recommendation for any Paleo or Bacon fan!
