Being an Italian I have been taught recipes that have be passed down from my great grandmother to my grand mother and so on to me. I don't think I have a recipe that has been passed down that utilizes measurements.This book is like those original recipes that come directly from my Italian relatives..Most recipes in this book call for a carrot, an onion, some meat some chicken or duck... Occasional you are asked for 2 tablespoons of flour, that is because using flour is more of a science, if that is off too far the dish might suffer. The only question I might ask the author is: what do you mean by mushroom trimmings? Does that mean chopped mushrooms or the stems and skin? It's interesting but not a deal breaker I would just use chopped mushrooms.Some recipes ask for wine and that is nice because wine gives a fruity deep full flavor to a sauce, but not to worry any time a recipe calls for wine if you are not into cooking with wine you can substitute it with beef or chicken broth.So grab your recipe book and some meat and mix up one of these delightful easy and mostly light sauces and enjoy your meal.. You will be surprised how easy it is to cook without measuring...I was very happy to be asked to review this book by the author and I am glad I didI just love the simplistic approach to cooking. Some feel that sauces are too rigid and must be prepared very precisely, this book will show you that is not true, My great grandmother didn't have the time to sift through stiff recipes and take an hour to mix up her favorite sauce, she just grabbed ingredients she had in the fridge and tossed them together, To me I have always cooked like that. You may find your sauce may not come out exactly the same every time but isn't that the joy of cooking? I remember making a large pot of soup using the French pot system. Gathering leftover vegetables from the entire week and adding them to a pot to cook up later. My family thought that was the best soup they ever had, they told me it was so good they would like it again. Problem, I had no idea how to make it again, well it is a fond memory I still have in my head..

The writer has us make the Espangnole Sauce (30 minutes), Veloute Sauce (30mins), or the Bechamel Sauce (2hrs) to be used as bases for other sauces in the book. Which can be further used to make tasty Tomato Sauce Piquante, Neopolitan Sauce, Roman Sauce, and Pasta Marinata. My only issue with most is the cost really gets up there due to the wines needed and well how often would one have Italian a week, but otherwise it is a nice take to go this route instead of the jars of Presto and any white sauce is better handmade than out of the jars, they are all disgusting to me or worst too watery. Nice recipes to try on a weekend for changing up the routine in our daily lives.I love the writing style of it and it is is written in a way that one doesnt need to be a cooking expert to be able to grasp. It also has great pictures in color inside that show the sauces and dishes that they can be used for. Additionally, there are instructions for how to substitute items in some of the recipes, dont like vinegar, try the alternative provided in one recipe, same for one with anchovies.I received a free copy in exchange for an honest unbiased review.
