By Judith Stephens #1 “Mushroom with paprika” is really recipe #168959 called “25-Minute Tunisian Vegetable Couscous” from the Internet web site allreciipesDOTcom posted by girlandagun July 21, 2009, and never even seen or cooked or prepared by this fake author, “Jackie Swansen” including the incorrectly spelling of “portabella” mushrooms! That’s called a Gotcha!But Encore Publishing did manage to screw up the instructions: ” Fuzz the couscous with a fork.” “Pour the vegetables and flavor with . . .” left out the word stock from their copied list of instructions. “Mix the chickpeas and tomatoes and pour the couscous and mix well.”#2 Quinoa and Lemon Juice” is really “Herbed Quinoa” off foodnetworkDOTcom as developed by Giana De Laurentiis for her show “Giada at Home” Episode Light and Delicious and just stolen by Encore Publishing’s fake author.Directions: “In a medium size saucepan, add chicken, quinoa . . .” but leaves out the word “stock” which is confusing.#3 “Beans and Cinnamon Chicken” is in reality a recipe from several Australian Internet sites with the real name of “Cinnamon Chicken with Bean Salad” which makes a LOT more sense. And Encore Publishing tried to disguise this recipe as not being their own by instructing the marinade to be microwaved before marinating the chicken. Not recommended because that will start to toughen the protein by cooking it and making it less able to work as a marinade to flavor the chicken. Helps if the publisher/fake author understands food science.Encore Publishing did follow the first instruction in the official recipe “Preheat oven to 180°F” and then proceeded to cook everything in the” microwave-safe pot” for no reason because the chicken is cooked in the aforementioned pre-heated oven. It is browned on top of a surface burneer or cook top.The real recipe says “Heat an ovenproof frypan over medium heat. Cook chicken, skin-side down, for 2 minutes or until golden. Turn and cook for 1 minute, then place in the oven for 12 minutes or until cooked through. Serve chicken on salad, topped with relish.”Encore Publishing says “Over medium heat, put a microwave-safe frying pan. Cook chicken for 2 minutes, until it turns golden in color. Turn and cook for 1 minute and then place in the oven for 12 minutes until it’s completely done. Serve the chicken with salad.” I don’t think they have a clue as to what the “Beatroot relish, to serve” really is and it ain’t salad. See what I mean? Total confusion because they’re trying to disguise the fact they lift ALL their recipes off copyrighted Internet sites.These recipes are ALL still derivative and a violation of the law.And on and on and on as usual.
