But there are older and possibly more satisfying techniques which are also touched upon in Home Preserving for those who love to stick to homemade, from jam and jelly-making and pickling, ice cream and sorbet-making to soups, stews and filling creating. These things are all relatively simple to do, but the results will gladden the heart and save money as well.

1 of 1 people found the following review helpful. Incomplete canning instructions--returned! By Joanne I never send anything back to Amazon, but this book is an exception. Not for beginners first of all, not by a longshot. There is absolutely NO explanation of how to properly can at all, I mean nothing. Each recipe ends with the instruction to "screw the lids on firmly, can the jars (see page 19 and following pages, then store as previously recommended). On Page 19 there is nothing useful there, no instructions on how to do anything to can your preserves, they are purely encyclopedic-type passages, defining what chutney is, what conserves are, but not how to make them! I am aghast. I am canning 1 1/2 yrs now and have a good 8 or so books on canning...and no reputable canning book leaves you to your own devices and guesswork as this one does. The book appears fabulous with glossy, colorful illustrations, but the love stops there. The recipes list ingredients and measurements and so on, but never tells you how long to process the jars for safety! This is crucial to know; it is unacceptable to proceed with any shelf canning w/o this knowledge. Size of jars and the ingredients contained in those jars all determine various safe processing times. How are we to know this if the recipe doesn't state this? Dangerous. Just a BIG opportunity missed. These 'recipes' make huge portions too, most often eight 8oz jars. That in itself wouldn't have mattered, recipes can be halved. But considering you can't approach the recipe w/o the info of how long to cook it, you won't make it anyway, you shouldn't anyway, for safety's sake. Home Preserving is the title, but don't be fooled. It is not a 'how to' book. It's a "how not to" book if you enjoy Russian Roulette games! The non-Amazon seller where I got this book also charges restocking fees and won't refund your shipping. To make matters worse, you need to spend more money to send it back, and they didn't have the courtesy to send me a prepaid mailing envelope...if not for Amazon's direct intervention to help me out, I would have lost everything.. Without a 'sneak peak' into this book, I couldn't possibly know just how badly these recipes were written. I ended up wasting my money and my time to remedy the return of this book. I hope I can help someone else avoid the same fate.

Lots of exciting recipes By Dan I own several canning books and although now is winter and the ingredients are not in season I like to have a look and prepare for the summer.The “Home Preserving” cookbook contains a lot of exciting recipes and it will be a good investment. There are recipes for making all sorts of preserves: jams, marmalades, jellies, butters and curds, chutneys, relishes, sauces, pickles, soups, stews and fillings, ice creams and sorbets.In the beginning you will learn about the required kitchen equipment, safety tips, how to choose the fruits and vegetables. Also tips and tricks for successful preserving various types of foods are included.The recipes are paired by beautiful images.In concussion: a useful book with lots of recipes which will teach you how to preserve a large variety of foods. Also it is suited for beginners because the recipes are simple and the directions are clear.
